Hello!

I had some extra time this morning, so me and my sister made some easy and heathy breakfast, Blueberry oatmeal!

 

Blueberry oatmeal ingredients for three people:

-Milk/vegan milk (I used almond milk) – 2 cups 

-Water – 2 cups

-Oats – 2 cups

-Salt – A pinch

-Blueberries (fresh or frozen)- 150 g

Toppings: 

-Almonds – Chopped 

-Honey (or Maple sirup) 

 

1. pour all ingredients, minus the blueberries,in a pot, and let it heat up. Stir often. When the porridge is thick, turn down the heat. 

2. Pour the berries into the oatmeal. 

3. Top the oatmeal with almonds and honey. I served it with a soft-boiled egg and toast.

Mediterranean Salad

Hello! 

Here is a recipe for a really delicious and filling salad, and it is also quit healthy with spinach, bell pepper, zucchini, chickpeas,  cucumber, carrots, avocado, onion, garlic and parsley. 

Ingrediens for the salad: 

Falafel1 package of store bought falafel ( I used Nutana Spicy organic falafel) 

Spinach – 4 handfuls 

Red bell pepper – 1/2 diced in big cubes  

Zucchini – 1/3 diced in big cubes 

Avocado – 1 sliced 

Cucumber – 10 Slices 

Onion – 1/4 sliced finely 

Carrots – 2 small or 1 big chopped finely 

Olive oil – 1 Tablespoon 

Salt and peper – To taste 

Ingrediens for chickpeas dressing: 

Chickpeas – 1 can 

Olive oil – 1 dl 

Parsley – 1 handful 

Garlic – 1 clove 

Salt and Pepper – To taste 

Lemon – 1 squeeze 

Ingrediens for yogurt dressing: 

Greek yogurt – 2 Tablespoons 

Chili paste – 1 Tsp. 

garlic – 1 clove grated 

Salt and Pepper – To taste 

Extra:

Whole wheat pita bread toasted 

Chopped parsley 

1. Heat up the oven to about 200 C, and put in the Falafels. Put zucchini and bell pepper in a pan with olive oil and salt and pepper, then put in the oven for approx. 20 minutes. 

2.  Blend all of the ingredients for the chickpea dressing with a hand-mixer or blender. 

3. Mix the yogurt dressing together. 

4.  Take a big plater place spinach, then carrots, cucumber, avocado and onion, then the baked vegetables and the falafel. Spread the dressings and sprinkle with parsley, and salt and pepper. Cut pita-bread into slices, and serve!

Easy basil pesto

I just made a really simple classic green pesto, it only takes 2 minutes to make, and even less time to eat!

It is great on pasta, on bread, on pizza, in salads and more!

Makes enough for 4 plates of pasta.

Ingredients:

Basil – Two big handfuls 

Olive oil – 50 ml 

Pine nuts – 1,5 tsp 

Garlic – To taste, but approx. 1 clove 

Parmesan or Pecorino romano cheese – 1 tsp

Salt – 1 pinch

Freshly ground black pepper – To taste 

Mix all the Ingredients together and blend in a blender, food processor or hand mixer.
